I’m back at home for a few days, which generally means I bake enough cakes, biscuits and bread to feed the entire village. That’s actually not an exaggeration, as the local choir, teachers, hairdresser and farmers each get a delivery when my family can’t physically bring ourselves to eat anymore.
Today I made jammie dodgers, after seeing a recipe in the Guardian a few weeks ago. I googled for other versions, bcos I couldn’t be bothered with zesting lemons and cornflour, but Jamie Oliver calls his “Jamie Dodgers” and it made me wince.
I couldn’t find seedless jam in my local shop and was too lazy to make my own so I went with both blackcurrant and strawberry jam for my ‘dodgers.
I begrudingly combined this recipe with this one from the Guardian, and only burnt my fingers once. Result.
