Colour & vitamin packed lunch

I’ve felt on the cusp of a cold for a few days now, so decided to tackle it from the inside out with vitamins and delicious food.

This work lunch came together out of what was in the fridge but ended up being delicious – here’s what went into it:

Beetroot and sweet potato – peeled, cubed and roasted with coconut oil
Cherry tomatoes – halved and warmed through
Turkey breast – cubed and fried in coconut oil
Sprouted beans – a selection from Whole Foods

It all got bunged in the microwave at work for three minutes and was surprisingly tasty!
