Ultimate post-gym feed

You guys, I’ve done it. I’ve discovered the ultimate post-gym meal. It goes a little somethin’ like this:

I was so dedicated to the cause when it came to nailing this recipe that I went out and bought a new pan specifically to trial it til I got it right. I somehow did on the first try, and now that pan basically never leaves my side. Also, it can be used in the oven, if I’m ever patient enough to try baking instead of poaching the eggs.

Ingredients:

Cooking chorizo, cubed
1 fat garlic clove, minced
1/2 tsp dried chili flakes
1 carton chopped tomatoes
A squeeze of sriracha
2 eggs
Grated cheese
Crusty bread

Method:

Other recipes I looked at use oil in the pan, but by choosing chorizo instead, you get the fat from that cooking the other ingredients, as well as tasty mouthfuls of spanish delight, so no oil is necessary. Generally I use about half of one side of those double pack cooking chorizo things you get in Sainsburys, although once I went mental and used basically an entire two packs. #noregrets

Cook the chorizo until the pan is all orange and gooey, and then add the chopped garlic and dried chili. My chili flakes are pretty old, so I use 1/2 tsp – if yours are fresher, use less. Before they start burning, add a 390g carton of bog standard chopped tomatoes, and stir it all together, making sure the garlic doesn’t get stuck at the bottom and turn all bitter and charred. Next I add a generous blob of Sriracha, although this is obviously up to you, and then when it’s all bubbling together nicely, crack two eggs directly into the pan and pop a lid on top. Within a few minutes the eggs will have turned white (aka cooked) but the yolk should still be runny.

I like to serve it with a little bit of grated cheese on top and dip in some crusty bread.

As a mixture of fat, protein and carbs its an all round winner post-gym and also takes barely any time or money to make. Yaaaaaas.
